would like to start by sharing with you a recipe, which was used as a starter at
the last NSPCC fundraising evening, given to me by Mrs Pam Watson. Frosted
Salmon Mousse Ingredients
Remove skin & bones from the salmon. Mash
the fish to a smooth paste. Stir in lemon juice, ketchup, parsley & seasoning. Put water into a small heatproof teacup or bowl. Sprinkle over the gelatine, stir once and leave until
spongy. Place
bowl/cup in a pan of hot water and stir over a low heat until the gelatine has
dissolved. Remove from the heat, strain the gelatine into the salmon and mix well. Whisk well
chilled evaporated milk until thick & nearly double in volume and fold into
salmon. Place egg whites into a clean dry bowl and whisk until standing in peaks. Fold half into the salmon with metal spoon, lifting and folding - repeat with the remaining egg whites, this will result in a spongy froth. Turn mixture into a lightly oiled 1.2L / 2 Pint ring mould. Place into freezer and cover once
frozen. When
ready to use take out of freezer and defrost and serve.
